Michelin Guide: Mizuhara Hiromitsu’s Ramen Empire

Mizuhara Hiromitsu is a well-known name in Tokyo’s ramen world. He has made a big impact as a creative chef, with three of his ramen shops included in the famous Michelin Guide.

His ramen shops are praised for their high quality and creativity, earning a special award called Bib Gourmand from the Michelin Guide. This award highlights restaurants that serve great food at good prices.

Mizuhara received his first Michelin recognition in 2015 for a shop in Kamikitazawa, where he offers unique ramen dishes.

In 2018, he opened another shop in Hongō-Sanchōme. This place became popular for its special ramen flavored with sanshō, which is a type of Japanese pepper.

This shows Mizuhara’s skill in mixing traditional flavors with new ideas.

His latest shop, King Seimen, opened in Ōji in 2020. It added more variety to his Michelin-awarded restaurants by focusing on ramen made with niboshi, which are dried fish.

This shows how Mizuhara enjoys exploring different styles of ramen.

For Mizuhara, making delicious food is not just about the taste; he wants to create a wonderful experience for his customers.

He believes in the joy of serving people rather than just being proud of his skills as a ramen chef. This attitude has made him popular with both local people and visitors from other countries.

By offering different styles of ramen instead of sticking to one recipe, Mizuhara has greatly enriched Tokyo’s ramen culture. Each of his shops is a special place for food lovers to enjoy.

Mother and joyful journalist.
